I'm sure if you place specifications in the notes of an order for a dragon asking for a fatherly personality then you will get a good one :p This goes for just about any spirits.

I'd say some of the Chinese dragons CH offers could be excellent father figures, particularly the Teachers, but I second what Okami said before me--just make sure to tell the conjurer precisely what you're looking for, and I'm sure they can find the perfect match for you.

I have a CC Itla dragon, and her notes say that she likes to be motherly towards me, so it seems possible that a dragon could be fatherly as well.
I'd say go through the different dragon races and see if anything really sticks out, then be specific in your order.
