SOUL CAKE

Ingredients
1 1/2 cups flour
3/4 cup sugar
3/4 cup soft butter
1/2 tsp ground cinnamon
1/2 tsp ground mixed spice
1/2 tsp ground nutmeg
1 egg (beaten)
2 tsp of white wine vinegar

Prep Work
Preheat the oven to 400 degrees Fahrenheit
Grease two large baking trays

Dough
Mix all the dry ingredients together until well-mixed
Mix the butter into the dry ingredient mix until the mixture looks like bread crumbs
Add the egg, and vinegar until you've created a firm dough
Cover the mixture and let chill for 20-30 minutes

Cakes
Flour your working surface
Roll the dough until it is approximately 1/4" thick
Cut the dough with a large, round pastry cutter
Place the cakes onto the greased baking pans

Bake
Bake the cakes until they are just turning golden

Serve warm, or chilled.

It is traditional to carve a cross on the top of the cake. The cakes represent a soul being freed from Purgatory.

These are a traditional Halloween treat given to the poor who would go "souling". They would go from door-to-door performing a song, say a prayer for you, or doing some action, to receive a soul cake. This is one of the traditions that strongly influenced trick-or-treating in the United States as immigrants brought homeland customs to the New World.

Here is a typical blend of spices used to make mixed spice:
1 Tbs ground allspice
1 Tbs ground cinnamon
1 Tbs ground nutmeg
2 tsp ground mace
1 tsp ground cloves
1 tsp ground coriander
1 tsp ground Ginger
Blend all spices together, and store in a sealed jar away from light.

400 degrees F = 204.444 degrees C, call it 205 degrees (minus a few minutes cooking).

1/4 of an inch is equal to .635 cm, or 6.35 mm - so call it 6.5 mm and cook a little longer... since you're going to be cooking a little shorter, because you're using an incrementally higher temperature, I think it evens out and doesn't change the cook time at all... but keep your eyes open because this is a kind of delicate recipe and it's fluffy, so it burns easily.
