.2 tablespoons salted butter
.2 tablespoons flour
.1/2 cup milk
1 cup pale low hop beer, such as a pilsner
.1/2 teaspoon mustard
.1/2 teaspoon garlic powder
.1/2 teaspoon paprika
.Dash of Worcestershire sauce
.3 cups of sharp cheddar cheese, shredded
.salt and pepper to taste



1. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for a minute or two, until the mixture has turned a nice golden brown colour. While whisking, gradually pour in the beer then the milk, both of which should thicken as they heat. Remove from heat and stir in the spices, Worcestershire sauce, and the cheese. Let the cheese melt; season to taste with salt and pepper.

COOK'S NOTE: For a peppier sauce, try spicier cheese like a pepperjack. Or, for a creamy, more tangy sauce, add a little goat cheese. Innovate to your tastes!

How about..

Yummy Fried Chicken Bites :)
Ingredients:
Olive Oil
Batter:
Whole wheat flour
Traditional oatmeal ground
cayenne pepper
Pepper
Salt

Coat chicken bites with mayonnaise then dip them in batter.

Cook them with thyme and butter. Green bell peppers can add a nice flavor as well

I did too but then I just started trying things out. A lot of it tasted really weird too. Eventually, from trial and error and slowly picking up on tricks and ideas I started making things that I liked. I'm far from professional but I cook from the heart.

If you're serious about cooking, watch some streetfood videos, they will teach you many things about ingredients and how to use them. And start small, use things you already have on hand and let your creativity take you away.

My chicken bites came to be one day when I was craving chicken tenders. Then I realized that I have frozen chicken, flour and eggs but I didn't have breading. Then I saw oatmeal and thought what the heck let's try this. Well, they weren't the best but I was happy with them and they slowly evolved into the chicken bites that I now know and love!
