Zodiac:

Ingredients:
500 ml water
1 cup of soy sauce
3 tbsps oyster sauce
2 slices of ginger or 1 tsp ginger powder
4 tbsps brown sugar
garlic cloves, peeled
spring onions, sliced
dried shiitake mushrooms with 1 cup shiitake mushroom water (just soak dried shiitake mushrooms in 1 cup hot water for minimum of 5 minutes to get it)
1-4 star anise (optional)
1-3 cinnamon sticks (optional)
salt and pepper to taste
1 kg chicken pieces (any part will do preferably chicken thighs)

How To Cook:
Combine all ingredients in a pot except for the chicken then put the chicken pieces in skin side down. Add more water if needed just to cover the chicken. Cover and let it boil then let it simmer on medium-low heat for 30-45 minutes or until chicken is cooked. Put chicken on a serving plate. Reduce the braising sauce to your liking then strain it to use it as a sauce for the rice or noodles. Serve with egg noodles and/or rice and steamed vegetables.
