What are you experiences? What do you leave for offerings? I have looked in the encyclopedia and I just saw for Buddha and not a medicine one.

Yes I have one from CH but that may not be much help, as I just think of it as one of my Immortals bindings, as well as one of my health bindings. It's one I haven't interacted with much.
CH do say offerings are not needed for their spirit bindings (which includes immortals) but they also say you can use the associations on the Encyclopedia pages for bonding purposes. That includes an 'offering'/treat. This is different from offerings that are expected or required as part of care for a bound spirit, or as part of a traditional spiritualist practice.
"Associations can be used to create a closer connection with the entity. By recognizing their associations with the Earth and Universe you can use any combination of these tools to create treats, rituals, and bonding exercises between you. "

I guess CH will say the associations on the Buddha page will be okay for the Medicine Buddha binding too but you can ask CH support if you want.
