My favorite ways to use Avocado's! If you don't like them, go no further, hahah.
2 ingredient smoothie = 2 bananas + 1 Avocado.
Avosalsa Toast = Mix 1 avocado with some salsa and put on toast!
Avocado Mousse = 1 Avocado + Maple Syrup + Cacao + Water as needed and blend up.
Butter Substitute = Try using mashed Avocado in your potato instead of butter. It's actually really good!

I've got another one you can add to your list:
Take leftover chicken (rotisserie chicken from the supermarket works great in this) and shred it up. Add avocado, lime, salt & pepper, spices/hot sauce (optional). Mash it all together.
VOILA! Chicken salad without mayo.
Why dip your toe in the water when you can do a cannonball?

Oh, my dear! I'm soooo doing this one soon. I have sensitivities to eggs and don't eat mayo (and really dislike the vegan ones), so this spoke to me on all kinds of levels. This is OT but since you mentioned egg sensitivities: You can use the "juice" from canned chickpeas as an egg substitute.
IIRC: 1 Tbsp= 1 Large egg yolk
2 Tbsp= 1 Large egg white
3 Tbsp= 1 whole Large egg

Nice. A couple of the above suggestions I've not seen before but seem like a no-brainer to me now. Might try.
I'll throw in avocado sushi bowls. If you know how to prepare sushi rice, the avocado sushi bowl satisfies a certain craving.. of course there can be additions.
Sushi rice, topped with sliced avocado.. +whatever else.
Sushi rice, seaweed and avocado for something more like the taste of an avocado roll.
Unless you can make avocado rolls, then do that. I make messy rolls and have opted for the deconstructed version at home. lol

The channel Kwoowk has an excellent avocado chicken recipe.
Ingredients required;
Ingredients required;
- Chicken breast
- Taco seasoning
- Avocado
- Plain Greek yogurt
- Lemon or lime
- Olive oil
- Frozen peas
- Cucumber
- Arugula
- Slice down middle of chicken breast, opening like a book.
- Coat the chicken in taco seasoning and pan fry on med-high heat until cooked through.
- Meanwhile, combine avocado with Greek yogurt, juice of a lemon or lime, salt, and olive oil in a food processor. All ingredients should be added to taste and until you have sauce-consistency. If you don't have a food processor, ingredients can be mixed by hand or in a blender.
- Steam some peas.
- Cut up some cucumber.
- Wash some arugula and place in a bowl with steamed peas and cucumber. Cover in cooked chicken. Pour avocado sauce on top and enjoy.
