The pennies were actually representative of prosperity - you receive bounty and wealth from the earth - you must give back in like kind. Most people don't have much money, so in my family, we've always used pennies. The quartz is to offer energy so the place you've taken from can recoup its losses. The water, obviously, is a blessing of health. However, just saying thank you is tremendously helpful, and it charges and changes energies all by itself.
As for thanking your spirits... it's OK to be derailed. It's the intent, not how it comes about, that matters most in all magick.
My family's magick is all about intent, and not actions, words, or tools. If you can't do it with nothing, flying by the seat of your pants, you can't really do it. The tools and the actions are great props, but they can also be great crutches that end up hobbling you... so you did great.
