Appetizer
Ghost Bites
( 3 ) 8 oz. cream cheese softened
( 2 ) large cucumbers finely chopped
1/4 small yellow bell pepper finely chopped
1/4 small red bell pepper finely chopped
1/4 small onion finely chopped
Mix all ingredients together and spread on white bread. Cut into four quarters or three lengthwise strips. Serve room temperature.
Salad
Faery Gardens
( 1 ) 1lb. Cut green beans
( 1 ) 1lb. Cut wax beans
( 1 ) 1lb. Garbanzo beans
( 1 ) 1lb. Red kidney beans
( 1 ) small onion cut into rings
( 1 ) small green pepper cut into thin strips
Dressing:
3/4 cup sugar
2/3 cup vinegar
1/3 cup olive oil
1/2 tsp. salt
Dash pepper
All beans should be cooked to firm, not mushy. Mix all the beans together and pour the dressing over the beans. Top the salad with the onion rings and bell pepper strips. Cover and marinate for 24 hours in refrigerator.
Entree
Unicorn’s Bloom
6 tbsp. butter
4 cups peeled, cubed eggplant
1 cup chopped onion
1 cup sliced celery
2 cups drained crowder peas
1 tomato chopped
1 tsp. salt
1/4 tsp. pepper
1 1/2 cup bread crumbs
1 cup grated cheddar cheese
In a large skillet melt the butter. Add the eggplant, celery and onion. Cook on med-hi 8-10 minutes, stir as needed. Stir in crowder peas, tomatoes, salt & pepper, and half the bread crumbs. Heat thoroughly. Pour cooked mixture into a casserole pan. Mix the cheese and remaining bread crumbs and sprinkle over the top. Bake at 350 degrees about 30 minutes—until brown.
Dessert
Sweets of the Muse
1 cup chocolate chips
2 tbsp. oleo
1 egg beaten
3 cups colored marshmallows
1/2 cup chopped nuts
1 cup coconut
Melt chocolate chips over hot water (not boiling). Add oleo & mix, then add egg and mix well. Let the mixture cool. Then add marshmallows and chopped nuts. On waxed paper shape into three rolls like a log and roll in coconut. Wrap in foil and refrigerate. After it hardens, slice into 1/2 or 1/4 inch slices.

MT DEW DUMPLINGS
2 CANS OF CRESENT ROLLS
1 STICK OF REAL UNSALTED BUTTER
1 CUP OF SUGAR
2 TEA SPOON CINNAMON (ADD OR TAKE AWAY AS YOU LIKE )
1 LG APPLE (ANY KIND YOU LIKE)
12 OZ CAN OF MT DEW
GET A BAKING PAN
MIX SUGAR AND CINNAMON TOGETHER SET ASIDE
CUT YOUR APPLE INTO SMALL OR EITH LARGE CHUNKS I DICE MINE SMALL
OPEN ROLLS AND I COAT EACH SIDE IN SUGAR MIXTURE THEN FILL WITH APPLES AND ROLLS UP PUT IN PAN DO THIS TILL PANS FULL NOW ON STOVE MELT BUTTER AND MIX IN THE SUGAR MIX BRING TO A BOIL AND THE POUR OVER THE ROLLS ON PAN COATING EACH ONE NICELY THEN TAKE YOUR MT DEW (IMPORTANT STEP) AND POUR SLOWLY INTO EACH OF THE FOUR CORNERS THEN BAKE TILL YOUR CRESENTS ARE DONE THE MT DEW WILL LOOK LIKE ITS TOO RUNNY WHEN YOUR DONE COOKING BUT YOU HAVE TO LET SIT FOR AT LEAST AN HOUR OR MORE
GREAT WITH MILK OR COFFEE !!

Only thing I can eat there is the dessert since I'm allergic to plants from the nightshade family: green and red peppers, tomatoes, eggplant etc...

Don't eat much meat but when I do, these are a couple of my favorites
2lbs lean ground turkey
1 large onion, chopped
2 celery ribs, chopped
6 garlic cloves, minced
2 cans (16oz) kidney beans, rinsed and drained
2 cans (16oz) black beans, rinsed and drained
6 cans (5 1/2 oz each) V8
1 cup broth (I use veggie)
1 can tomato paste
1 tsp. vegebase
3 tsp. ground cumin
1 tsp. salt
1/2 tsp. crushed red pepper flakes
2 bay leaves
1 tbsp. brown shugar
In a dutch oven, cook the turkey, onion, celery and garlic over medium heat until meat is no longer pink and veggies are tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered for 20 minutes to allow flavors to blend. Discard bay bay leaves. I like to serve with shredded cheddar cheese on top and cornbread.
NOT SO SLOPPY JOES
1 tbsp. olive oil

1 clove garlic, minced
1 red bell pepper, finely chopped
1 lb ground beef
1 (6oz) can tomato paste
1 1/2 tsp. chili powder
1 stp. ground cumin
1/8 tsp. black pepper
1/8 tsp. ground cinnamon
1 tsp. salt
4 hamburger buns
1/2 cup grated cheddar
1/2 cup sour cream
Heat oil in large skillet over medium heat. Add onion, garlic and bell pepper.Cook until softened, about 3 minutes. Add beef, crumbling with spoon until no trace of pink remains, about 8 minutes. Spoon off and discard excess fat. Stir in tomato paste, chili powder, cumin, black pepper, cinnamon, and salt. Simmer about 12 minutes. Spoon beef mixture onto bottom halves of buns and top with cheddar and sour cream. Sandwich with top bun.
