making this for dinner today and as it simmers and smells absolutely scrumptious i thought "why not post the recipe" for others to enjoy.

osso bucco is a simple italian dinner made from shankbones (i use the crosscuts and you can ask the butcher to give you anywhere from 1/2" to 1" shanks - no tails!). you can use either beef or veal for this though i usually use beef shanks since they seem meatier.

depending upon how many shanks will be used (i used two today, plus it gives me two bones for the two girls, lol) decide upon the size stock pot you will need (4 shanks will normally take up the bottom of a large sized soup stockpot of 6-8 qts).

use a good olive oil and pour enough in to cover the bottom of your pot and cook on medium. add the fresh shanks to the oil and cook to brown the beef. turn the heat down to simmer, add anywhere from 1/2 can to 1 can of beef broth, onion slices to taste (1/2 cup to full cup), fresh diced garlic (i do not want to hear anyone using minced garlic from a jar - poo, tastes horrible and too heavy). cover the pot and allow the beef, broth and additives to simmer for at least 3 hours. keep a watch on it every so often and before you remove the leg bone (the beef eventually falls away from the bone), if it is still inside the bone, remove the marrow and mix it in with the juices cooking.

anywhere from 3 to 4 hours it is finished and ready to serve.

i like to enjoy this dish over freshly made pasta or egg noodles like my poppi made but pennsylvania dutch makes a wide egg noodle that is perfect for this as it allows the sauce to coat the noodles in a most delicious way. you could also serve over rice but i prefer noodles/pasta.

seasonings are all to taste and i throw in pinches of sea salt, pepper and basil as it simmers. if the sauce isn't thick enough you can always make a roux using equal amount of butter with flour and add it to the gravy to thicken.

oh crockpot absolutely cause it cooks at a low diffused heat and usually doesn't evaporate too much of the juices. :) enjoy! :hug: :grouphug:
