::wave:: Before I forgot, I wanted to share this yummy experiment with you guys. It's such a light little desert. Almost like a custard or a pudding. If you added whole eggs it would probably be more custardy. I just had egg whites so I used those.
Feel free to tweak this too. I would be interested in knowing what you added. I think drained pineapple and some chopped nuts would really work well. Or maybe using fruit ambrosa as a topping. (whipped cream and canned fruit.)

Ingredients:

1 Small can pumpkin (just pumpkin. I had 'Libby's' from Thanks Giving still so I used that.)
1 medium ripe banana (sliced)
1 cup shredded sweetened coconut
1.5 cups blue diamond almond milk (or whatever you use/have.)
1/4 cup brown sugar (or other sweetener)
1 T. Honey (if you're using honey for the sweetener ignore this.)
2 Large eggs( I used egg whites)
Dash of cinnamon (I love cinnamon, so mine was a nice big dash. You could also use pumpkin pie spice, or whatever.)
Vanilla extract (I used about 2 tsp)
Orange extract(if you got it. Organic is the best it tastes better.)

Preheat oven to 450.
Mix all ingredients well. Should be like the texture of gaucamole.
Pour into a greased casserole dish, I think the one I used was 9x13 or something.

Bake for 15 minutes at 450. Turn temperature down to 350 bake 40 more minutes or until your poker comes out clean.

It will set up as it cools. Do not cut for 20 minutes or so. It smelled so yummy though I cut it at 10 or 15 minutes. It really was only cut for serving purposes. You could really just use a spoon to scoop it. It will be like custard or rice pudding texture.

It will smell delicious while it bakes! :hungry:

If you're curious I got about 16 servings and its 115 calories a piece.

Owww oatmeal....that is an awesome idea :thumbup: Never had it in a smoothie but I did have a pumpkin milkshake once. Love pumpkin tarts, cookies, cake, pie, pasta, pumpkin butter, even had pumpkin mac and cheese once :lol:
